These are a quick, easy and healthy snack which is wheat free, dairy free, refined sugar free, egg free and nut free! They are super delish with a chewy crunchy texture – even my chocolate loving boys can’t stop eating these, and they are fantastic for my sweet pregnancy cravings!!

10 Second Grain Free Bites

Serves: 24 pieces Cooking Time: 10 minutes

Ingredients

  • 100 grams oats
  • 100 grams dried apricots
  • 100 grams honey
  • 30 grams desiccated coconut
  • 20 grams flax seeds
  • 20 grams sunflower seeds
  • 20 grams pepitas/pumpkin seeds
  • 20 grams coconut oil
  • 10 grams chia seeds
  • 1 teaspoon vanilla bean paste/extract
  • Pinch of salt

Instructions

METHOD (THERMOMIX):

Preheat oven to 180 degrees.

Add all ingredients to bowl.

Mix 10 seconds/Speed 5.

Spoon mixture into mini muffin tray(s). Press mixture down with damp fingers/hands.

Bake for 10 minutes or golden brown.

Leave to cool before taking out of tray(s).

METHOD (BLENDER):

Preheat oven to 180 degrees.

Add all ingredients to blender.

Mix on the highest setting until all of the ingredients have combined.

Spoon mixture into mini muffin tray(s). Press mixture down with damp fingers/hands.

Bake for 10 minutes or golden brown.

Leave to cool before taking out of tray(s).

Notes

*You can use other dried fruit instead of the dried apricots (i.e. pitted dates, sultanas). **You can use rice malt syrup instead of honey. ***If you don't have mini muffin trays, you can make this into a slice and cut it up into bite sized pieces once cooled.

Healthy Carrot Cake Slice

New year, healthy snacks!! This is a healthier version of a carrot cake, but in a slice form – which makes it super easy to make and super easy to eat!! Deliciously moist, with a crunch from walnuts, and a burst of sweetness from the sultanas.

Add carrots, oats, flour, maple syrup, oil, coconut, chia seeds, eggs, vanilla and cinnamon to bowl.

Mix 20 seconds/Speed 6.

Healthy Carrot Cake Slice

Ingredients

  • 300 grams carrots (washed, tops cut off, cut into smaller pieces)
  • 100 grams oats
  • 100 grams wholemeal self raising flour
  • 100 grams maple syrup
  • 80 grams oil (extra virgin olive oil, rice bran, coconut etc)
  • 30 grams desiccated coconut
  • 10 grams chia seeds
  • 2 x eggs
  • 1 teaspoon vanilla bean paste/extract
  • 1 teaspoon ground cinnamon
  • 100 grams walnuts
  • 60 grams sultanas

Instructions

1

Preheat oven to 180 degrees.

Add carrots, oats, flour, maple syrup, oil, coconut, chia seeds, eggs, vanilla and cinnamon to bowl. Mix 20 seconds/Speed 6.

Add walnuts to bowl. Mix 5 seconds/Speed 4.

Add sultanas to bowl. Mix 5 seconds/Speed 3/reverse.

Pour mixture into a greased slice tin. Bake for 15 minutes or until top is browned.

Cool and cut into squares.

*Nut free: use sunflower seeds instead of walnuts.

Cinnamon Doughnut Cookies

Ahhhh these are the type of cookies that you can keep eating, and eating, and eating!! They are a fluffy, melt in your mouth cookie, with a crunchy sugary cinnamon coating and taste like what a doughnut would taste like… in cookie form! My husband has been eating these with a slather of Nutella on top!

Add butter, sugar, and egg to bowl.

Mix 1 minute/Speed 5. Scrape down.

Add flour, vanilla and salt.

Roll into teaspoon sized balls,

Cinnamon Doughnut Cookies

Ingredients

  • COOKIE:
  • 130 grams butter
  • 110 grams sugar
  • 1 egg
  • 220 grams self raising flour
  • 1 teaspoon vanilla bean paste/extract
  • Pinch of salt
  • COATING:
  • + 1 tablespoon cinnamon
  • + 1 1/2 tablespoons sugar

Instructions

1

Preheat oven to 180 degrees.

Add butter, sugar, and egg to bowl. Mix 1 minute/Speed 5.

Add flour, vanilla and salt. Mix 15 seconds/Speed 4.

Roll into teaspoon sized balls, and coat balls in cinnamon and sugar coating mixture.

5

Bake for 12 to 14 minutes.

Orange Yoghurt Cake

This is super moist on the inside and nice and crunchy on the outside! I have a lot of oranges and yoghurt at the moment so thought I would combine the 2 together with some baking!

I used my Kmart Silicon Mini Loaf Pans for this – you can use any cake tin for this – muffin ones, square ones, or 1 loaf/cake tin but you will need to adjust the baking time accordingly.

 Cut the ends off the orange and with a sharp knife, cut the orange rind off (leaving the white peel)
 
Cut the ‘white peel’ off
 
Quarter the oranges – discard the ‘white peel’ and ends of orange, and use the orange rind and quartered orange flesh
 
Add all cake ingredients to bowl

Mix 10 seconds/Speed 7
 
Pour into greased cake/loaf pan(s)
 
Bake for 30 minutes or until tops are browned
 
Wait for cakes to cool and make icing. Place icing in a zip lock bag then cut off the corner.
 
Pipe on top of the cakes

 If you wish (and have an extra orange) – grate the rind of an orange

 

And sprinkle on top of icing
 
Orange Yoghurt Cake

Orange Yoghurt Cake

Ingredients

  • 1 x orange - rind and quartered flesh (scroll down for example photos)
  • 230 grams self raising flour
  • 125 grams butter
  • 150 grams sugar
  • 250 grams yoghurt (any type, I use Jalna Vanilla)
  • 3 x eggs
  • Icing (optional)
  • 90 grams icing sugar
  • 20 grams butter
  • 1 tablespoon orange juice
  • + rind of 1 orange to decorate

Instructions

CAKE:

Preheat oven to 160 degrees.

Add all ingredients to bowl - mix 10 seconds/Speed 7.

Pour mixture into greased cake/loaf pan(s) and bake for 30 minutes or until tops are browned (adjust time depending on cake pan you are using i.e. if you are using 1 cake pan, bake for approx. 1 hour).

Leave to cool before icing.

ICING:

Add all icing ingredients to bowl - mix 10 seconds/Speed 7.

Spread/pipe on top of cakes (see photos below for serving suggestion).

Notes

Note: Icing is completely optional, this tastes great on its own or with some icing sugar on top. If you love icing, you can double the recipe to spread a thicker layer on top!

Healthy Banana Bread

This is a delicious and moist banana bread with a beautiful texture from the sultanas and walnuts.
This recipe is from my FIL’s partner, Jane. After visiting their place the other day, my husband and I were dreaming about it, it was so delicious! I have converted this recipe to make a quick and easy banana bread in the Thermomix! This takes a total 15 ‘Thermomix’ seconds to mix up, so is super quick and easy to make, but it is in a few steps so that the sultanas and walnuts aren’t blitzed up too much!!

 
Add 3 x bananas, self raising flour, oil, eggs, brown sugar, cinnamon and nutmeg to bowl.
 

Mix 4 seconds/Speed 5. Scrape down. 

Add walnuts – mix 3 seconds/Speed 3. 

Add sultanas – mix 8 seconds/Speed 2/Reverse.

Pour into loaf tin… 

 
 …and decorate with 1 x chopped up banana on the top.
Bake for 30 – 35 minutes or until skewer comes out clean.
 
  

Leave to cool for a few minutes before cutting…a beautiful texture with the walnuts and sultanas!

  • 50 grams brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 70 grams walnuts
  • 80 grams sultanas
  • 1 x banana to decorate

Instructions

METHOD (Thermomix):

Preheat oven to 180 degrees.

Add 3 x bananas, self raising flour, oil, eggs, brown sugar, cinnamon and nutmeg to bowl - mix 4 seconds/Speed 5. Scrape down.

Add walnuts - mix 3 seconds/Speed 3.

Add sultanas - mix 10 seconds/Speed 2/Reverse.

Pour into loaf tin and decorate with 1 x chopped up banana on the top.

Bake for 30 - 35 minutes or until skewer comes out clean.

METHOD (Non Thermomix):

Preheat oven to 180 degrees.

Mash banana and chop walnuts.

Add all ingredients to bowl and stir until well combined.

Pour into loaf tin and decorate with 1 x chopped up banana on the top.

Bake for 30 - 35 minutes or until skewer comes out clean.
