Easy Chicken Pasta

This year I’ve made the Steggles pledge to #MakeTime for my loved ones by having more family meals together at the dining table!

We get so caught up in routine and it can be so chaotic in the evenings that we usually have three different mealtimes and eating areas – the girls eating on the high chairs in the kitchen while I prepare dinner for everyone else, the boys eating at their kids table, then @mrtwinsandablog and I eating on the couch once the kids have gone to bed!

Growing up, I remember eating at the table together with my family every night and it was a great way to connect and spend time as a family every day!

I made a @Steggles roast chicken in the morning, had a busy day then quickly put together the pasta ingredients in the afternoon so we could eat dinner together.

Easy Chicken Pasta

Ingredients

  • 1.9kg @Steggles Family Roast Chicken
  • 3 garlic cloves
  • 5 sprigs fresh rosemary
  • Olive oil
  • 2 tbsp taco seasoning
  • 500gm Farfalle pasta (cooked)
  • 2 cups frozen peas/carrots/corn (cooked)
  • 200ml sour cream
  • Salt and pepper to season

Instructions

Preheat oven to 180 degrees. Place chicken in a roasting pan.

Stuff garlic cloves + 4 sprigs rosemary in chicken cavity.

Rub chicken with oil, taco seasoning rosemary (remove leaves from sprig).

Cover with foil and bake for 1 hour 15 mins.

Remove foil and bake for a further 15 minutes to brown the skin.

Remove chicken from oven and allow to cool.

Once cooled, shred half the chicken and stir together with pasta, frozen vegetables, sour cream and salt & pepper.

Notes

You can use the whole chicken or half the chicken - I like to use the other half of the chicken for chicken sandwiches/pizza/toasties the next day!

30 Second Chocolate Banana Slice

My favourite recipes are the ones where you chuck in all the ingredients and mix! This is light, fluffy, chocolate-y with a hint of banana, and very very easy to eat!

This is the first recipe I’ve created since finding out I’m pregnant with my 2nd lot of twins as I’ve been feeling sooo sick and uncomfortable this pregnancy (moreso than with the boys!)! Was a quick and easy way to use up the 2 lonely overripe banana’s on my bench!

Add all ingredients to bowl.

Mix 30 seconds/Speed 4.

Spoon and spread batter into a slice tin.

Bake for 25-30 minutes or until a skewer comes out clean.

30 Second Chocolate Banana Slice

Ingredients

  • 2 x bananas
  • 180 grams self raising flour
  • 120 grams butter
  • 120 grams sugar
  • 100 grams dark chocolate chips
  • 20 grams cocoa powder
  • 1 teaspoon vanilla bean paste/extract
  • 1 x egg

Instructions

Preheat oven to 160 degrees.

Add all ingredients to bowl. Mix 30 seconds/Speed 4.

Spoon and spread batter into a slice tin.

Bake for 25-30 minutes or until a skewer comes out clean.

Cool before cutting up into squares.

10 Second Apricot and Coconut Cookies

I love a quick and delicious recipe! You can literally whip these up in the morning during breakfast time for the coming day! These are firm and not too crumbly for little fingers to hold easily.

Mix 10 seconds/Speed 5.

Roll teaspoon sized balls onto a lined baking tray.

  • 220 grams wholemeal self raising flour
  • 130 grams coconut oil
  • 100 grams coconut sugar
  • 80 grams dried apricots
  • 40 grams desiccated coconut
  • 1 teaspoon vanilla bean paste/extract
  • 1 x egg

Instructions

Preheat oven to 180 degrees.

Add all ingredients to bowl. Mix 10 seconds/Speed 5.

Roll teaspoon sized balls onto a lined baking tray.

Bake for 8 minutes or until brown.

Easy Oreo Brownies

My pantry always has Oreo’s in it, as my husband and I always loooove buying them on sale, but never end up eating them! This is a quick and delicious way of using Oreo’s and it looks amazing!

Easy Oreo Brownies

Ingredients

  • 170 grams plain flour
  • 150 grams oil (rice bran, veg, coconut etc)
  • 150 grams brown sugar
  • 100 grams milk
  • 50 grams cocoa powder
  • 1 x egg
  • 1 teaspoon vanilla
  • 1 x packet Oreos

Instructions

Preheat oven to 170 degrees.

Add all ingredients to bowl. Mix 20 seconds/Speed 5.

Pour and spread into slice pan.

Press Oreo's into batter.

Bake for approximately 18 minutes.

Cool and cut into squares around the Oreo's.

(Optional) Serve dusted with icing sugar.

Simple Egg Sandwich Filling

This is my quick and easy lunch solution, especially if I have minimal ingredients at home! My husband and boys love this!! My husband loves his very SIMPLE egg sandwiches (if he makes it himself it is literally just eggs + store bought mayo) however he also loves it with the extra spring onions and occasionally with 1 teaspoon of Keens Curry Powder.

Add water in bowl, and eggs in steaming basket. Cook 14 minutes/Varoma/Speed 1.

Empty water from bowl, and peel eggs under cold running water.

Add spring onions to bowl.

Blitz 3 seconds/Speed 7.

Simple Egg Sandwich Filling

  • 1 litre water
  • 4 x eggs
  • 2 x spring onions (roughly chopped)
  • 100 grams mayonnaise
  • Sat and pepper to season

Instructions

Add water in bowl, and eggs in steaming basket. Cook 14 minutes/Varoma/Speed 1.

Empty water from bowl, and peel eggs under cold running water.

Add spring onions to bowl. Blitz 3 seconds/Speed 7.

Add eggs, mayonnaise, salt and pepper. Blitz 3 seconds/Speed 4.

Notes

*Fills approx. 4 sandwiches. **You can change this up by adding 1 teaspoon Keens Curry Powder for Curried Egg Sandwiches, mustard, paprika, grated cheese, or veg like carrots or celery in with the spring onions.

Christmas/ Dessert/ Non Thermomix/ Thermomix

No Bake Mango Mousse Slice

This is my mum’s recipe that I have grown up with!! My family has this regularly when Mango’s are in season! This is a refreshing and delicious dessert, snack or a ‘bring a plate’ dish in summer! It is a super simple dish and a hit with everyone in the family!!

Prepare and add mangoes into a large baking pan/roasting tray.

Add the 2 x jelly packets, gelatine powder and water in bowl.

Heat 4 minutes/50 degrees/Speed 2.

Add evaporated milk and eggs.

Pour over mangoes and set in fridge overnight.

No Bake Mango Mousse Slice

Ingredients

  • 2 mangoes (peeled, seed removed and roughly diced)
  • 1 x packet pineapple jelly
  • 1 x packet orange jelly
  • 10 grams gelatine powder
  • 500 grams water
  • 1 x can evaporated milk (approx. 375 grams)
  • 2 x eggs

Instructions

METHOD (THERMOMIX):

Prepare and add mangoes into a large baking pan/roasting tray.

Add the 2 x jelly packets, gelatine powder and water in bowl. Heat 4 minutes/50 degrees/Speed 2.

Add evaporated milk and eggs. Mix 10 seconds/Speed 4.

Pour over mangoes and set in fridge overnight.

Cut up in slices and serve chilled.

METHOD (NON THERMOMIX):

Prepare and add mangoes into a large baking pan/roasting tray.

Add the 2 x jelly packets, gelatine powder in a large bowl. Mix with 500 grams boiling water until jelly crystals dissolve.

Add evaporated milk and eggs and mix until mixture well combined.

Pour over mangoes and set in fridge overnight.

Cut up in slices and serve chilled.

Notes

*This works with other flavours of jelly - however it looks better with orange/yellow coloured jelly - i.e. lemon, mango, passionfruit, pineapple, orange.
