30 Second Chocolate Banana Slice

My favourite recipes are the ones where you chuck in all the ingredients and mix! This is light, fluffy, chocolate-y with a hint of banana, and very very easy to eat!

This is the first recipe I’ve created since finding out I’m pregnant with my 2nd lot of twins as I’ve been feeling sooo sick and uncomfortable this pregnancy (moreso than with the boys!)! Was a quick and easy way to use up the 2 lonely overripe banana’s on my bench!

Add all ingredients to bowl.

Mix 30 seconds/Speed 4.

Spoon and spread batter into a slice tin.

Bake for 25-30 minutes or until a skewer comes out clean.

Ingredients

  • 2 x bananas
  • 180 grams self raising flour
  • 120 grams butter
  • 120 grams sugar
  • 100 grams dark chocolate chips
  • 20 grams cocoa powder
  • 1 teaspoon vanilla bean paste/extract
  • 1 x egg

Instructions

Preheat oven to 160 degrees.

Add all ingredients to bowl. Mix 30 seconds/Speed 4.

Spoon and spread batter into a slice tin.

Bake for 25-30 minutes or until a skewer comes out clean.

Cool before cutting up into squares.

Simple Egg Sandwich Filling

This is my quick and easy lunch solution, especially if I have minimal ingredients at home! My husband and boys love this!! My husband loves his very SIMPLE egg sandwiches (if he makes it himself it is literally just eggs + store bought mayo) however he also loves it with the extra spring onions and occasionally with 1 teaspoon of Keens Curry Powder.

Add water in bowl, and eggs in steaming basket. Cook 14 minutes/Varoma/Speed 1.

Empty water from bowl, and peel eggs under cold running water.

Add spring onions to bowl.

Blitz 3 seconds/Speed 7.

Add eggs, mayonnaise, salt and pepper.

Simple Egg Sandwich Filling

Ingredients

  • 1 litre water
  • 4 x eggs
  • 2 x spring onions (roughly chopped)
  • 100 grams mayonnaise
  • Sat and pepper to season

Instructions

Add water in bowl, and eggs in steaming basket. Cook 14 minutes/Varoma/Speed 1.

Empty water from bowl, and peel eggs under cold running water.

Add spring onions to bowl. Blitz 3 seconds/Speed 7.

Add eggs, mayonnaise, salt and pepper. Blitz 3 seconds/Speed 4.

Notes

*Fills approx. 4 sandwiches. **You can change this up by adding 1 teaspoon Keens Curry Powder for Curried Egg Sandwiches, mustard, paprika, grated cheese, or veg like carrots or celery in with the spring onions.

30 Second Banana and Date Cake

This is a quick and easy deliciously moist cake with beautiful banana and date flavours! I love the chia seed topping as it not only looks amazing but adds a beautiful crunch!

Banana and Date Cake

Ingredients

  • 180 grams wholemeal self raising flour
  • 125 grams butter
  • 80 grams milk
  • 70 grams pitted dates
  • 70 grams maple syrup
  • 2 x bananas
  • 1 x egg
  • 1 teaspoon baking powder
  • + extra pitted dates and chia seeds to decorate

Instructions

Preheat oven to 160 degrees.

Add all ingredients to bowl. Mix 30 seconds/Speed 4.

Pour into lined cake tin & decorate with extra pitted dates and chia seeds.

Bake for 35 minutes or until skewer comes out clean.

Baking/ Non Thermomix/ Snacks/ Thermomix

4 Ingredient Date Slice

This is the easiest, simplest and tastiest slice! With just 4 x 100 grams of ingredients, this takes 30 seconds to mix together, and 15 minutes to bake!

4 Ingredient Date Slice

Ingredients

  • 100 grams pitted dates
  • 100 grams oats
  • 100 grams almonds (or sunflower seeds if nut free)
  • 100 grams milk

Instructions

METHOD (Thermomix):

Preheat oven to 160 degrees.

Add all the above ingredients to the bowl - mix 30 seconds/Speed 5.

Pour mixture into a square baking pan and press down with the back of a metal spoon until firm.

Bake for 15 minutes or until edges are browned.

Cool completely and cut into squares.

METHOD (Food processor/blender):

Preheat oven to 160 degrees.

Add all the above ingredients into bowl and mix on high until mixture is combined.

Pour mixture into a square baking pan and press down with the back of a metal spoon until firm.

Bake for 15 minutes or until edges are browned.

Cool completely and cut into squares.
