30 Second ABCD Muffins

With all the festive sweet treats lately, I wanted to sneak in some healthy goodness into the boys, especially since they haven’t been eating their fruit well lately (they chew their fruit then spit it out!) ahhh!

These are suupppper moist and delish!!!

Add all ingredients to bowl.

Mix 30 second/Speed 4.

30 Second ABCD Muffins

Ingredients

  • 1 x Apple (quartered and cored)
  • 1 x Banana (peeled and broken into pieces)
  • 30 grams desiccated Coconut
  • 60 grams Dates
  • 300 grams wholemeal self raising flour
  • 230 grams milk
  • 80 grams coconut sugar
  • 75 grams coconut oil

Instructions

METHOD (THERMOMIX):

Preheat oven to 180 degrees.

Add all ingredients to bowl. Mix 30 second/Speed 4.

Spoon into muffin cases.

Bake for 15 minutes or until skewer comes out clean.

METHOD (NON THERMOMIX):

Preheat oven to 180 degrees.

Mash banana, grate apple and chop dates into small pieces.

Add all ingredients into a large bowl and mix until well combined.

Spoon into muffin cases.

Bake for 15 minutes or until skewer comes out clean.

Notes

*Larger muffin cases like the ones pictured take approx. 18 minutes baking time. **Can be frozen/defrosted.

20 Second Choc Chip Chia Muffins

Yum! Good old fashioned choc chip muffins with the added crunch and nutrition of chia seeds!

20 Second Choc Chip Chia Muffins

Serves: 12 muffins

Ingredients

  • 300 grams self raising flour
  • 230 grams milk
  • 130 grams white sugar
  • 75 grams butter
  • 150 grams choc chips
  • 20 grams chia seeds
  • 1 teaspoon vanilla bean paste/extract
  • 1 x egg (optional)

Instructions

METHOD (THERMOMIX)

Preheat oven to 180 degrees.

Add all ingredients into the bowl - mix 20 seconds/Speed 4.

Spoon into muffin cases.

Bake for 15 minutes or until a skewer comes out clean.

METHOD (NON THERMOMIX)

Preheat oven to 180 degrees.

Melt butter and stir all ingredients into a bowl until well combined.

Spoon into muffin cases.

Notes

*Egg can be optional - as this base muffin recipe is like my 20 Second Crunchy Lemon Muffin recipe which works well with or without egg.

Goji Berry Coconut Muffins

The boys are IN LOVE with Goji Berries at the moment! I buy Goji Berries wherever and whenever I see them – which is very often! They are available from anywhere from Coles/Woolworths, Aldi, Costco, even the dried fruit and nut shop at the markets!

I thought that Goji Berries were the new fad food, however I didn’t realise this until recently – but I have been eating Goji Berries my whole life!! Goji Berries are also known as Wolfberries and are used in Chinese cooking, commonly as a base for chinese soups to sweeten it up!!

Goji Berries are a superfruit, which is a good source of Vitamin C and antioxidants (amongst other things)!

The boys have been snacking on these instead of sultanas (they aren’t as sweet as sultanas) and I have been topping my porridge with them, however I thought I would incorporate them in my baking too!

Goji Berry Coconut Muffins

Cooking Time: 20 minutes

Ingredients

  • 270 wholemeal self raising flour
  • 230 grams milk
  • 130 grams coconut sugar
  • 80 grams coconut oil
  • 40 grams Goji Berries
  • 30 grams desiccated coconut
  • (Optional) extra Goji Berries and pepitas to top

Instructions

METHOD (THERMOMIX):

Preheat oven to 180 degrees.

Add all ingredients to bowl - mix 20 seconds/Speed 4.

Spoon into muffin cases and top with extra Goji Berries and pepitas.

Bake for 20 minutes or until a skewer comes out clean

Met coconut oil and mix all ingredients together until well combined.

20 Second Doughnut Muffins

When my husband ate my 20 Second Crunchy Lemon Muffins, he said they tasted like a lemon doughnut – so I had to make this version of a cinnamon doughnut muffin!! This is dangerously good!!!

20 Second Doughnut Muffin

  • MUFFIN:
  • 300 grams self raising flour
  • 150 grams white sugar
  • 75 grams butter
  • 230 grams milk
  • 1 egg (optional)
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • TOPPING:
  • 80 grams butter (melted)
  • 1/3 cup sugar
  • 1 teaspoon cinnamon

Instructions

METHOD (Thermomix):

Preheat oven to 200 degrees.

Add all 'muffin' ingredients into the bowl - mix 20 seconds/Speed 5.

Spoon into muffin cases.

Bake for 15 minutes or until a skewer comes out clean.

As soon as the muffins come out of the oven, brush the tops of the muffins with melted butter, and press the muffin top/sprinkle with the sugar/cinnamon mixture.

METHOD (Non Thermomix):

Melt butter.

Add all 'muffin' ingredients into the bowl and mix until well combined.

This is a quick and easy banana muffin recipe and looks great with the oat topping! This is an egg free, nut free recipe, and is easily frozen/defrosted.

  • 230 grams milk
  • 160 grams self raising flour
  • 60 grams oats
  • 60 grams brown sugar
  • 75 grams butter
  • + Extra oats to top

Add all muffin ingredients into bowl. Mix - 20 seconds/Speed 5.

30 Second Milo Muffins

Oops I did it again! I can’t resist some delicious Milo goodness!!! I present to you… 30 Second Milo Muffins!!!

These muffins are deliciously moist and fluffy, and has a beautiful crunchy muffin top!!! My trusty taste testers (Ethan and Harley) kept on saying ‘MUM, more, more’!!

NOTE: This is an egg free recipe!! Through my blogging experience, I didn’t realise how many egg allergies there were, so along with the 20 Second Crunchy Lemon Muffin recipe (which works well without the egg), here is another DELICIOUS muffin recipe without eggs! This is also great for those of you…like me…who run out of eggs in the house and still feel like whipping up some baked goods!!

  • 100 grams dark chocolate chips
  • 80 grams Milo

Add all ingredients into the bowl - mix 30 seconds/Speed 5.

Whole Orange and Poppyseed Muffins with Almond and Chia Seeds

This is a variation of the 30 second whole orange cupcakes as I wanted to sneak in some extra nutrition with the boys eating it too. The extra stuff in it doesn’t make this in ’30 seconds’ anymore but it’s still very quick and easy!! 🙂
Blitz Almonds – 10 Seconds/Speed 9. Set aside
Add orange and butter
Mixed orange and butter
 Add all other ingredients
Mix for 30 seconds/Speed 8 with spatula stirring through hole
 Muffin mixture
Spoon mixture into muffin tins
Serve with sifted icing sugar

Whole Orange and Poppyseed Muffins with Almond and Chia Seeds

Ingredients

  • 40 grams almonds
  • 1 x whole orange (cut into quarters)
  • 250 grams butter
  • 3 eggs
  • 200 grams sugar
  • 330 grams self raising flour
  • 1 tablespoon chia seeds
  • 1 tablespoon poppy seeds

Instructions

Preheat oven to 180 degrees.

Add muffin cases to muffin tray (or if using silicon muffin trays, cases are optional - I didn't use cases for the mini muffins as they are for the boys).

Place almonds in bowl and blitz - 10 seconds/Speed 9. Set aside.

Place orange and butter into bowl and mix - 7 seconds/Speed 8. Scrape down and mix 15 seconds/Speed 8.

Add all remaining ingredients including set aside blitzed almonds and mix 30 seconds/Speed 8 (using a spatula to mix through the top and push the mixture down).

Spoon mixture into muffin trays. Bake mini muffins for 10 - 15 minutes and big muffins for 20 - 25 minutes or until skewer comes out clean.

Serve with sifted icing sugar on top.
