Healthy Apple and Custard Crumble

I really felt like a winter warming custard + apple crumble – so here is my healthy version of the 2 combined! YUM!

Add all of the ‘CRUMBLE’ ingredients to bowl.

Add all of the ‘CUSTARD’ ingredients to bowl.

Cook 8 minutes/90 degrees/speed 3.

Cook 14 minutes/100 degrees/Spoon speed/Reverse.

Healthy Apple and Custard Crumble

Ingredients

  • CRUMBLE
  • 80 grams oats
  • 60 grams maple syrup
  • 40 grams desiccated coconut
  • 20 grams chia seeds
  • 10 grams coconut oil
  • CUSTARD
  • 500 grams milk
  • 80 grams maple syrup
  • 50 grams cornflour
  • 2 x eggs
  • APPLE
  • 5 x apples
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon

Instructions

Preheat oven to 160 degrees.

Add all of the 'CRUMBLE' ingredients to bowl. Mix 5 seconds/Speed 5. Set aside. (Don't clean bowl).

Add all of the 'CUSTARD' ingredients to bowl. Cook 8 minutes/90 degrees/speed 3. Pour into roasting pan/dish. (Don't clean bowl).

Add all of the 'APPLE' ingredients to bowl. Cook 14 minutes/100 degrees/Spoon speed/Reverse. Pour into roasting pan/dish on top of custard.

Top with set aside CRUMBLE and bake for 20 minutes or until top is browned.

Notes

*You can use Rice Malt Syrup/Honey etc instead of Maple Syrup. **You can either use red or green apples (or whatever you have in the house) ***If you love more crumble, you can easily double the crumble ingredients. ****The apple juice with the stewed apples may seem quite watery, however will caramelise and help the apples further cook when baked. *****If you are feeling super lazy, you can use tinned apple pie apples instead 😉

Apple Crumble Loaf

This is a healthy version of an apple crumble – in loaf form!!! It is deliciously moist with a crunchy crumbly topping. Great for breakfast, a snack, or dessert!!

Add all TOPPING ingredients to bowl.

Mix 5 seconds/Speed 5. Set aside. (Do not clean bowl)

Pour and spread loaf batter into loaf pan.

Apple Crumble Loaf

Ingredients

  • TOPPING:
  • 40 grams oats
  • 30 grams maple syrup
  • 20 grams desiccated coconut
  • 10 grams chia seeds
  • LOAF:
  • 2 x apples (quartered and cored)
  • 200 grams wholemeal plain flour
  • 160 grams milk
  • 150 grams dried apricots
  • 70 grams coconut oil
  • 60 grams maple syrup
  • 30 grams desiccated coconut
  • 2 x eggs
  • 1 teaspoon bicarb soda

Instructions

Preheat oven to 170 degrees.

Add all TOPPING ingredients to bowl. Mix 5 seconds/Speed 5. Set aside. (Do not clean bowl)

Add all LOAF ingredients to bowl. Mix 10 seconds/Speed 6.

Pour and spread loaf batter into loaf pan.

Pour and spread topping mixture on top of the batter and gently press down.

30 Second ABCD Muffins

With all the festive sweet treats lately, I wanted to sneak in some healthy goodness into the boys, especially since they haven’t been eating their fruit well lately (they chew their fruit then spit it out!) ahhh!

These are suupppper moist and delish!!!

30 Second ABCD Muffins

  • 1 x Apple (quartered and cored)
  • 1 x Banana (peeled and broken into pieces)
  • 30 grams desiccated Coconut
  • 60 grams Dates
  • 300 grams wholemeal self raising flour
  • 230 grams milk
  • 80 grams coconut sugar
  • 75 grams coconut oil

Instructions

METHOD (THERMOMIX):

Preheat oven to 180 degrees.

Add all ingredients to bowl. Mix 30 second/Speed 4.

Spoon into muffin cases.

Bake for 15 minutes or until skewer comes out clean.

METHOD (NON THERMOMIX):

Preheat oven to 180 degrees.

Mash banana, grate apple and chop dates into small pieces.

Add all ingredients into a large bowl and mix until well combined.

Spoon into muffin cases.

Bake for 15 minutes or until skewer comes out clean.

Notes

*Larger muffin cases like the ones pictured take approx. 18 minutes baking time. **Can be frozen/defrosted.

Apple and Maple Custard

This is a beautiful twist on the usual custard recipe, adding apples throughout the custard. Great for when you feel like custard, but you really should eat your fruit – so why not combine the two!? This has beautiful small pieces of apple which creates a beautiful texture with the smooth creamy custard, and it pairs really well with maple syrup. This is perfect for toddlers/kids especially in reusable food pouches, or you can puree it for baby food (also this is great for older babies when introducing textures).

Notes

This has small pieces of apple throughout, if you prefer a smoother texture (i.e. for baby food or to 'hide' the apples), puree the custard - 30 seconds/Speed 9 (slowly turning the dial progressively from Speed 0 to 9).

This is super quick, easy and HEALTHY! The apple and cinnamon flavours shine out in this moist and fluffy slice.

10 Second Apple Cinnamon Slice

Ingredients

  • 2 x red apples (quartered and cored)
  • 150 grams wholemeal plain flour
  • 100 grams coconut oil
  • 70 grams coconut sugar
  • 60 grams walnuts (or sunflower seeds if nut free)
  • 1 x egg
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • + 1 teaspoon cinnamon/2 teaspoons coconut sugar to top

Instructions

METHOD (Thermomix):

Preheat oven to 180 degrees.

Add all ingredients to bowl. Mix 10 Seconds/Speed 5.

Pour and spread into baking pan.

Mix 1 teaspoon cinnamon and 2 teaspoons coconut sugar together in a small bowl and sprinkle over slice mixture.

Bake for 20 minutes or until skewer comes out clean.

Cool before cutting into squares.

METHOD (Non Thermomix)

Grate apples, melt coconut oil, and chop walnuts.

Mix all ingredients in a large bowl until well combined.

*You can use normal plain flour instead of wholemeal, another oil i.e. rice bran, vegetable, instead of coconut sugar, or white sugar instead of coconut sugar

Apple and Celery Cake Cookies

The boys have been teething out their big back teeth lately, and cookies and bread have been their preferred form of food.

I thought I’d make them something tasty and sneak in some fruit and veg! You would have nooooo idea that there’s celery in here!

These are a melt-in-your-mouth cake textured cookie (similar to a whoopie cookie if you’ve had one!)

This is delicious with a cup of tea, and great for an after school snack!

 
Add almond to bowl – mix 10 seconds/Speed 9. Set aside.
 
Add apples and celery stalk to bowl 
Mix 3 seconds/Speed 7. Scrape down.
 
Mix a further 3 seconds/Speed 7. Set aside.

 Add butter, sugar and egg to bowl 
 
Mix 7 seconds/Speed 5. Scrape down.
Mix a further 7 seconds/Speed 5.
 
Add the set aside almond, apple and celery mixture, flour, cinnamon, salt, and bicarb soda
 Mix 15 seconds/Speed 5
 
Spoon portions with a teaspoon
 
Spoon onto a lined baking tray
 
 Bake for 8 to 12 minutes or until browned

  • 60 grams almond
  • 2 small apples/1 large apple (quartered and cored)
  • 1 celery stalk (cut into 1 inch pieces)
  • 110 grams butter
  • 150 grams brown sugar
  • 1 egg
  • 230 grams wholemeal plain flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon bicarb soda

Instructions

Preheat oven to 180 degrees.

Add almond to bowl - mix 10 seconds/Speed 9. Set aside.

Add apples and celery stalk to bowl - mix 3 seconds/Speed 7. Scrape down.

Mix a further 3 seconds/Speed 7. Set aside.

Add butter, sugar and egg to bowl - mix 7 seconds/Speed 5. Scrape down.

Add the set aside almond, apple and celery mixture, flour, cinnamon, salt, and bicarb soda - mix 15 seconds/Speed 5.

Apple Pie Bliss Balls

These are delicious apple pie flavoured bliss balls! Guilt free apple pie!
Note: Medjool dates differ in dryness, so you may need to add 5 – 10 grams more coconut oil/an extra date if the mixture comes out dry, or add 5 – 10 grams more ‘dry’ ingredients (oats, LSA, chia seeds) if the mixture comes out too sticky to shape into the balls.
Add all ingredients into your bowl
Blitz until all ingredients are blended together
Use a metal tablespoon to measure out mixture
Squeeze the mixture together with damp hands
 ..and shape into a ball!

Apple Pie Bliss Balls

  • 100 grams dried apple
  • 120 grams medjool dates (pitted)
  • 100 grams oats
  • 20 grams ground LSA (linseed, sunflower, almond)
  • 10 grams chia seeds
  • 40 grams desiccated coconut
  • 50 grams coconut oil
  • 1 teaspoon ground cinnamon

Instructions

METHOD (Thermomix):

Add all the above ingredients into your bowl.

Blitz 1 minute/Speed 7.

With damp hands, use a metal tablespoon to measure out the crumb-like texture, squeeze the mixture in your hand and shape into a ball.

Place in fridge (or freezer) to set.

METHOD (Blender):

Add all the above ingredients into your bowl.

Blitz on the highest setting until all of the ingredients have combined to your desired consistency.

With damp hands, use a metal tablespoon to measure out the crumb-like texture, squeeze the mixture in your hand and shape into a ball.

Place in fridge (or freezer) to set.

30 Second Caramel Apple Cake

I love baking that incorporates fresh fruit…makes it ‘healthier’!! 😉

I used a bundt tin for this as I’ve been busting to use my new bundt tin, but you could use a loaf pan, square pan, or make into cupcakes!!

You can use any type of red apples, however I used Fuji (my fave!). You can peel the skin off the apples, however I like to keep them on as it’s easier, and has that extra nutrition!

Add 2 x quartered and cored apples
Add all ingredients
Blitz 30 seconds/Speed 7
Pour into tin
Bake for 45 – 55 minutes, adjust depending on your tin size or if making cupcakes bake for approx. 20 – 25 minutes
 

30 Second Caramel Apple Cake

Ingredients

  • 2 red apples (quartered and cored)
  • 370 grams plain flour
  • 320 grams oil
  • 300 grams sugar
  • 3 x eggs
  • 2 teaspoons vanilla bean paste
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 teaspoon bicarb soda

Instructions

Preheat oven to 175 degrees Celcius.

Add all ingredients to the bowl in the above order. Mix - 30 seconds/Speed 7.

Pour into a pre-greased cake tin.

Bake for 45 - 55 minutes or until a skewer comes out clean.
