LSA

LSA is an acronym for milled Linseeds (Flaxseeds), Sunflower Seeds and Almonds. LSA is high in protein, fibre and Omega 3 essential fatty acids. LSA is a rich source of protein which helps with sugar cravings and helps balance sugar levels.

LSA is a fantastic way too add extra nutrients into your food! You can add it to your smoothies, cereal/muesli in the morning, yoghurt, baked goods, bliss balls, sprinkle some through your main meals, or even use it as a coating for your chicken nuggets/fish fingers instead of breadcrumbs!

I have used LSA in some of my recipes including my Ferrero Rocher Bliss Balls, Apple Pie Bliss Balls and Simple Banana Smoothie!

Add all ingredients to bowl.

Blitz – 10 seconds/Speed 9.

Ingredients

  • 160 grams linseeds (flax seeds)
  • 80 grams sunflower seeds
  • 40 grams almonds

Instructions

METHOD (THERMOMIX):

Add all ingredients to bowl.

Blitz - 10 seconds/Speed 9.

Store in an airtight container in the fridge.

METHOD (FOOD PROCESSOR):

Add all ingredients into food processor.

Blitz on high until all ingredients are ground into a fine breadcrumb texture.

Store in an airtight container in the fridge.

Crunchy Munchy Honey Cakes

Crunchy, munchy honey cakes, they’re great to eat and they’re fun to make! This Wiggle’s song has been in my head for days, so I thought it was a sign to make them!! My husband also reminded me that the Rat in Banana’s in Pyjamas is obsessed with Munchy Honey Cakes!

These taste like the Cornflake honey joys in a melt-in-your-mouth cake! MMmmmmm!! 

 
Add honey, butter and milk to bowl
 
 Heat 3 minutes/50 degrees/Speed 2
Add Cornflakes, self raising flour, almonds, coconut and vanilla
 
 Mix 8 seconds/Speed 3/reverse
 
Spoon into cupcake patties…
 
and bake for 10 minutes or until tops are browned
 
 
Crunchy Munchy Honey Cakes!


Crunchy Munchy Honey Cakes

Cooking Time: 10 minutes

Ingredients

  • 120 grams honey
  • 130 grams butter
  • 60 grams milk
  • 80 grams Cornflakes
  • 130 grams self raising flour
  • 30 grams slivered almonds (or sunflower seeds if nut free)
  • 30 grams desiccated coconut
  • 1 teaspoon vanilla paste/extract

Instructions

METHOD (Thermomix):

Preheat oven to 170 degrees.

Add honey, butter and milk to bowl - heat 3 minutes/50 degrees/Speed 2.

Add Cornflakes, self raising flour, almonds, coconut and vanilla - mix 8 seconds/Speed 3/reverse.

Spoon into cupcake patties and bake for 10 minutes or until tops are browned.

METHOD (Stovetop):

Preheat oven to 170 degrees.

Add honey, butter and milk in a medium sized pot on low heat - stir until all ingredients have melted together.

Take mixture off the heat, and add Cornflakes, self raising flour, almonds, coconut and vanilla - mix until all combined.

Spoon into cupcake patties and bake for 10 minutes or until tops are browned.

Whole Orange and Poppyseed Muffins with Almond and Chia Seeds

This is a variation of the 30 second whole orange cupcakes as I wanted to sneak in some extra nutrition with the boys eating it too. The extra stuff in it doesn’t make this in ’30 seconds’ anymore but it’s still very quick and easy!! 🙂
Blitz Almonds – 10 Seconds/Speed 9. Set aside
Add orange and butter
Mixed orange and butter
 Add all other ingredients
Mix for 30 seconds/Speed 8 with spatula stirring through hole
 Muffin mixture
Spoon mixture into muffin tins
Serve with sifted icing sugar

Whole Orange and Poppyseed Muffins with Almond and Chia Seeds

Ingredients

  • 40 grams almonds
  • 1 x whole orange (cut into quarters)
  • 250 grams butter
  • 3 eggs
  • 200 grams sugar
  • 330 grams self raising flour
  • 1 tablespoon chia seeds
  • 1 tablespoon poppy seeds

Instructions

Preheat oven to 180 degrees.

Add muffin cases to muffin tray (or if using silicon muffin trays, cases are optional - I didn't use cases for the mini muffins as they are for the boys).

Place almonds in bowl and blitz - 10 seconds/Speed 9. Set aside.

Place orange and butter into bowl and mix - 7 seconds/Speed 8. Scrape down and mix 15 seconds/Speed 8.

Add all remaining ingredients including set aside blitzed almonds and mix 30 seconds/Speed 8 (using a spatula to mix through the top and push the mixture down).

Spoon mixture into muffin trays. Bake mini muffins for 10 - 15 minutes and big muffins for 20 - 25 minutes or until skewer comes out clean.

Serve with sifted icing sugar on top.
