Milo Dog Cookies

These dog cookies are for human consumption (not canine consumption 😉 ) to celebrate this year’s Chinese New Year – Year of the Dog!

Despite being Chinese/Malaysian, I don’t make rice or do much Chinese cooking (I leave that to my mum!) but I thought I would make some cookies in celebration of the Year of the Dog with the help of my 3 year old half Asian twin boys to teach them a little bit about their Chinese heritage.

These are perfect for the Year of the Dog celebrations, but would also be really cute in lunchboxes or for a kids party! This is a variation of my Milo Cookies.

Add chocolate chips to bowl

– blitz 5 seconds/Speed 7.

Add butter, sugar and egg to bowl

– mix 1 minute/Speed 5.

Add plain flour, self raising flour, Milo and milk

– mix 20 seconds/Speed 6. Scrape down.

Mix a further 20 seconds/Speed 6.

Knead – 2 minutes/kneading function/MC off.

Roll into teaspoon sized balls

and decorate with Milo cereal, sprinkles and chocolate chips (as pictured).

Bake for 8 – 10 minutes.

Milo Dog Cookies

Serves: approx. 56 cookies

Ingredients

  • 100 grams dark chocolate chips
  • 250 grams butter (softened)
  • 50 grams sugar
  • 1 egg
  • 310 grams plain flour
  • 90 grams self raising flour
  • 110 grams Milo
  • 60 grams milk
  • To decorate:
  • *Milo cereal
  • *Sprinkles
  • *Dark chocolate chips

Instructions

METHOD (Thermomix):

Preheat oven to 170 degrees.

Add chocolate chips to bowl - blitz 5 seconds/Speed 7.

Add butter, sugar and egg to bowl - mix 1 minute/Speed 5.

Add plain flour, self raising flour, Milo and milk - mix 20 seconds/Speed 6. Scrape down.

Mix a further 20 seconds/Speed 6.

METHOD (Electric Mixer):

Preheat oven to 170 degrees.

Crush chocolate chips in a blender, food processor, or chop finely/grate (from block form if easier).

Add crushed chocolate, butter, sugar and egg into a large bowl - beat until mixture is combined/creamed.

Add plain flour, self raising flour, Milo and milk - mix until ingredients are combined.

Knead (either with a stand mixer attachment or by hand) for approx. 2 minutes.

Roll into teaspoon sized balls and decorate with Milo cereal, sprinkles and chocolate chips (as pictured).

Bake for 8 - 10 minutes.

Notes

*Once cooled, store in an air tight container. **You can use flaked almonds instead of Milo Cereal for the ears. ***You can use the round sprinkles for the eyes instead of the long sprinkles. ****You can use smarties or milk/white chocolate chips for the nose to make diff coloured dogs.

Chocolate Chip Oat Cookies

My pregnancy cravings have been calling for chocolate chip cookies after seeing all these Coles ads with their chocolate chip cookies – so I thought I would make my own and add some oats in there for some texture, fibre and goodness! These are very moreish cookies and delicious with a cuppa tea or a cold glass of milk! Mmm!

Chocolate Chip Oat Cookies

Print Recipe
Serves: Approx. 35 Cooking Time: 11 minutes

Ingredients

  • 130 grams butter
  • 60 grams white sugar
  • 60 grams brown sugar
  • 150 self raising flour
  • 150 dark chocolate chips
  • 100 grams oats
  • 1 teaspoon vanilla
  • 1 x egg
  • Pinch of salt

Instructions

Preheat oven to 180 degrees.

Add butter, white sugar and brown sugar to bowl. Melt 3 minutes/60 degrees/Speed 2.

Add flour, chocolate chips, oats, vanilla, egg and salt. Mix 10 seconds/Speed 4.

Spoon teaspoon sized balls of dough onto a lined baking tray.

Bake for 9 - 11 minutes or until browned.

30 Second Chocolate Banana Slice

My favourite recipes are the ones where you chuck in all the ingredients and mix! This is light, fluffy, chocolate-y with a hint of banana, and very very easy to eat!

This is the first recipe I’ve created since finding out I’m pregnant with my 2nd lot of twins as I’ve been feeling sooo sick and uncomfortable this pregnancy (moreso than with the boys!)! Was a quick and easy way to use up the 2 lonely overripe banana’s on my bench!

  • 180 grams self raising flour
  • 120 grams butter
  • 120 grams sugar
  • 100 grams dark chocolate chips
  • 20 grams cocoa powder
  • 1 teaspoon vanilla bean paste/extract
  • 1 x egg

Instructions

Preheat oven to 160 degrees.

Add all ingredients to bowl. Mix 30 seconds/Speed 4.

Spoon and spread batter into a slice tin.

Bake for 25-30 minutes or until a skewer comes out clean.

Lamington Cupcakes

Yum! To celebrate Australia Day (and being Aussie every other day), this is a super delish and easy lamington recipe! I love lamingtons, and have made the ‘real’ square ones once, but it is way too fiddly and messy for me – this is soooo much easier, quicker ANNNNDDD you get a bonus AMAZING milkshake after you make them!! My fussy milkshake husband said it was one of the best milkshakes he’s had!

Add ‘cupcake’ ingredients to bowl.

Distribute batter between 12 muffin cases.

Leave to cool. Clean and dry bowl.

Mix a further 2 minutes/50 degrees/Speed 2.

Dip the tops of the cupcakes into the chocolate topping…

Lamington Cupcakes

Serves: 12 muffin sized cupcakes

Ingredients

  • CUPCAKES:
  • 210 grams self raising flour
  • 190 grams butter
  • 150 grams sugar
  • 80 grams milk
  • 40 grams cornflour
  • 3 x eggs
  • 2 teaspoons vanilla bean paste/extract
  • TOPPING:
  • 200 grams dark chocolate chips
  • 30 grams coconut oil
  • Approx. 1 cup shredded/desiccated coconut
  • MILKSHAKE:
  • Leftover 'topping' ingredients
  • 250 grams milk
  • Handful of ice

Instructions

1

Preheat oven to 160 degrees.

Add 'cupcake' ingredients to bowl. Mix 30 seconds/Speed 6.

Distribute batter between 12 muffin cases.

Bake for 17 minutes or until a skewer comes out crumb free.

Leave to cool. Clean and dry bowl.

Notes

Serving suggestion - these would be AMAZING with the tops cut off and with cream and jam in the middle!!

Milomisu

This is amazing and new fave dessert!!! This is a combo of Milo Mousse with the sponge biscuits from Tiramisu and is deliiiicious!

I love it with the sponge biscuits dipped in coffee as coffee really brings out the chocolate flavour and the bitterness of the coffee offsets the sweetness in the chocolate, however for a kid friendly version (and for fussy adults like my husband who have never, and won’t ever try a cup of coffee) you can dip the biscuits in a combo of Milo and hot water.

I personally don’t like alcohol in my desserts, however you can add some marsala, rum, or brandy to the coffee mixture to add some adult X factor in there!

You can use small dessert bowls or one large dessert bowl or dish.

Place butterfly into bowl. Add thickened cream, Milo, cocoa, and sugar.

Set out sponge finger biscuits, coffee/hot Milo mixture, set aside blitzed chocolate chips, Milo mousse and small glass bowls/a large glass bowl.

Add a layer of blitzed chocolate chips to the bottom of the bowl(s)…

  • 1 bottle thickened cream (600ml)
  • 6 heaped tablespoons Milo
  • 2 tablespoons cocoa
  • 2 tablespoons sugar
  • 1 large packet of sponge finger biscuits
  • 300ml strong black coffee OR 300ml boiling water + 3 tablespoons Milo
  • *for an alcoholic version - add 50ml (or more) Marsala, rum or brandy with 250ml coffee

Instructions

Choc mint is one of my favourite flavour combos! This is amazing with the candy canes – as it looks really festive, plus the candy canes add a beautiful crunch with the choc mint fudge!

Remove lid and wipe condensation off with paper towel.

O.M.G! This has become my ALL TIME FAVOURITE FUDGE! I took this to work and everyone said that this is the best fudge I’ve ever made – and I have made a loooooooot of fudge with different flavours and recipes!!

Caramel with some saltiness is AMAZING in itself, but the coconut adds a extra depth of flavour and texture, and the taste just lingers in your mouth making you want more!

I LOVE FUDGE! And I love how easy it is to make and it goes a looooong way with gifts and feeding a crowd! I used to think fruit and nut chocolate was for ‘old people’, but I guess I fall in that boat now as my husband and I really enjoy it!! Chocolate fudge can’t be that bad for you if there is fruit and nuts in it, right???

Choc Chip Candy Cane Cheesecake

This is the ULTIMATE Christmas cheesecake! The candy canes give a beautiful minty taste which is beautifully refreshing on a summers day, and the dark chocolate chips balance out the sweetness of the cheesecake. This is super quick and easy (I LOVE easy recipes) to whip up for the festive season!

No need to wash out bowl (just try and get as much of the crumbs out into the pan as you can).

Choc Chip Candy Cane Cheesecake

Ingredients

  • BASE:
  • 250 grams arrowroot biscuits (or any other sweet biscuits)
  • 140 grams butter (softened)
  • 40 grams dark chocolate chips
  • CHEESECAKE:
  • 500 grams cream cheese (cubed, softened)
  • 1 x 396 gram tin sweetened condensed milk
  • 80 grams dark chocolate chips
  • 8 - 12 large candy canes (roughly broken up, add number of candy canes depending on how minty you prefer it)
  • TO DECORATE:
  • 80 grams dark chocolate chips
  • Peanut M and M's
  • Silver cachous

Instructions

Grease and line springform pan.

Add 'base' ingredients to bowl. Mix 15 seconds/Speed 9.

Pour into pan and press down with the back of a metal spoon.
