Choc Chip Candy Cane Cheesecake

This is the ULTIMATE Christmas cheesecake! The candy canes give a beautiful minty taste which is beautifully refreshing on a summers day, and the dark chocolate chips balance out the sweetness of the cheesecake. This is super quick and easy (I LOVE easy recipes) to whip up for the festive season!

Add ‘base’ ingredients to bowl.

Mix 15 seconds/Speed 9.

Pour into pan and press down with the back of a metal spoon.
No need to wash out bowl (just try and get as much of the crumbs out into the pan as you can).

Add ‘cheesecake’ ingredients ingredients to bowl.

Mix 20 seconds/Speed 6.

Pour into pan and spread.

Place in fridge overnight to set.

Once set, decorate with melted chocolate, peanut M and M’s and silver cachous as per the pictures.

(To melt dark chocolate chips – place in a ziplock bag – zap in 30 second intervals and squish bag until all choc chips are melted).

Choc Chip Candy Cane Cheesecake

Ingredients

  • BASE:
  • 250 grams arrowroot biscuits (or any other sweet biscuits)
  • 140 grams butter (softened)
  • 40 grams dark chocolate chips
  • CHEESECAKE:
  • 500 grams cream cheese (cubed, softened)
  • 1 x 396 gram tin sweetened condensed milk
  • 80 grams dark chocolate chips
  • 8 - 12 large candy canes (roughly broken up, add number of candy canes depending on how minty you prefer it)
  • TO DECORATE:
  • 80 grams dark chocolate chips
  • Peanut M and M's
  • Silver cachous

Instructions

Notes

* In the photo I used a 25cm wide springform pan. You can use a smaller springform pan i.e. 20cm and the base and filling will be higher/deeper 🙂 ** If you don't like mint, you can omit the candy canes to make a Choc Chip Cheesecake 🙂

Milo Cheesecake Swirl Brownies

This is a hybrid of the 20 Second Milo Brownies with a cheesecake. So easy and so darn delicious! This takes a total 30 ‘Thermomix’ seconds to whip up.
  
I reduced the sugar from the ‘original’ 20 Second Milo Brownies as there is sugar in the cheesecake mixture too.

Add all brownie ingredients in bowl. Mix – 20 second/Speed 5.

Pour and spread 3/4 of the brownie mixture into a baking pan and set aside 1/4 of the mixture.

(Don’t clean bowl). Add all cheesecake ingredients in bowl.

Dollop set aside 1/4 brownie mixture on top of the cheesecake mixture…

Milo Cheesecake Swirl Brownies

Ingredients

  • BROWNIE (20 Second Milo Brownies)
  • 170 grams plain flour
  • 170 grams oil (any - vegetable, rice bran, grapeseed, coconut etc)
  • 200 grams sugar
  • 3 eggs
  • 20 grams cocoa powder
  • 60 grams Milo
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla bean paste/extract
  • CHEESECAKE
  • 250 grams cream cheese (room temp, cubed)
  • 30 grams sugar
  • 1 egg
  • 1 teaspoon vanilla bean paste/extract

Instructions

Preheat oven to 170 degrees.

Add all brownie ingredients in bowl. Mix - 20 second/Speed 5.

Pour and spread 3/4 of the brownie mixture into a baking pan and set aside 1/4 of the mixture.

(Don't clean bowl). Add all cheesecake ingredients in bowl. Mix 10 seconds/Speed 5.

Pour and spread cheesecake mixture on top of brownie mixture.

Dollop set aside 1/4 brownie mixture on top of the cheesecake mixture, and swirl around with a toothpick or wooden skewer.

A Beautiful Mess Cake

For my 30th birthday earlier this year, I just had make myself the coolest cake I had ever made… (because I’m worth it!) 😉 But now being a mummy it had to be easy, and something I could start a few days earlier and do bit by bit in between mummy duties.
I’ve been inspired looking at cake photos by Andy Bowdy, Katherine Sabbath and Unbirthday Bakery, with the drizzled ganache, random toppings and torched meringue, each cake very individual and different, so thought I would make my own!
This is what I call, a Beautiful Mess!

This Beautiful Mess consisted of alternating layers of golden gaytime cheesecake and pink velvet cheesecake, topped with dark chocolate ganache and pink candy melts, torched meringe, gaytime biscuit crumbs, shredded coconut, pink sugared marshmallows, lollipops, gum balls, jellybeans, edible flowers (pansies), cacous and edible glitter…..YUMMMM!
I chose the cake flavours, as my husband loves Golden Gaytime (if you haven’t seen my Golden Gaytime icecream cake post I made for his birthday), and I LOVE red velvet cupcakes.
My party was on a Saturday, so I started making the 4 cheesecakes on Thursday – 2 x Golden Gaytime Cheesecakes and 2 x Pink Velvet Cheesecakes:

And I used a Recipe Community recipe for the Pink Velvet Cheesecakes (with Pink Colouring instead of Red, to go with my ‘pink’ theme):
I doubled the recipe for both recipes and luckily they fit well in my TM5 bowl!
I left the cheesecakes in the fridge overnight, and on Friday I assembled and decorated with the chocolate ganache and pink candy melts. I made the ganache with the chocolate ganache recipe in the Basic Cookbook TM5 chip, and Candy Melts I melted in the microwave.

After both drizzled dark chocolate ganache, and drizzled candy melts steps, I placed the cake in the fridge to set, and left in the fridge overnight.
On Saturday morning, the morning of the party, I finished off decorating my cake with torched meringue. I made 2 x batches of the meringue with my Kitchenaid with the following recipe:

…and then topped with Gaytime biscuit crumbs (made in the Gaytime Cheesecake recipe), shredded coconut, pink sugared marshmallows, lollipops, gum balls, jellybeans, edible flowers (pansies), cacous and edible glitter…

Baked Ricotta Cheesecake

I thought I’d start off with posting my first cake and latest cake.
This cake a made a few days ago for my parents 32nd anniversary.

I found a Thermomix replica recipe for the famous ricotta cheesecake from Pasticceria Papa in Leichardt. I’ve eaten a lot of ricotta cheesecakes, especially when I used to work in Marrickville, however this was the first time I have made it. Best cheesecake I’ve ever eaten! Super smooth filling and soft melt in mouth pastry…. My recent cakes and cupcakes have drawn inspiration from instagram photos from Andy Bowdy, Katherine Sabbath and Unbirthday bakery. I love the look (and taste) of messy, but tactfully placed sweet treats above a torched meringue or buttercream topping.

On top of this ricotta cheesecake, I placed torched meringue (best made in my Kitchenaid), chocolate waffle biscuits, white and original tim tams, Ferrero Roches (stolen from my husbands stash), strawberries, toasted and shredded coconut, persian fairy floss (which I discovered melts after about an hour on the meringue) and edible flowers.
