Lychee and Coconut Pudding with Maple Crumble

This is a deliciously refreshing dessert!!! The fruity creaminess is beautifully paired with the crunchy crumble topping! It is not very sweet so is very light and easy to eat – the mild sweetness comes from the sugar from the tinned lychees and maple syrup in the crumble.

Add all PUDDING ingredients into bowl.

Mix 5 minutes/60 degrees/Speed 4.

Pour into silicon muffin or dariole moulds and place in fridge to set for a minimum 3 hours.

Whilst waiting for the pudding to set in the fridge, clean and dry bowl.

Preheat oven to 180 degrees.

Add CRUMBLE ingredients to bowl.

Mix 5 seconds/Speed 5.

Pour and spread onto a lined baking tray.

Bake for 5-7 minutes or until browned.

Leave to cool and ‘crumble’ up the mixture with a fork.

To serve, pop the pudding out of the mould and onto a plate.

Ingredients

  • PUDDING:
  • 560 grams tinned lychees with syrup
  • 400 grams coconut milk
  • 30 grams desiccated coconut
  • 20 grams gelatin powder
  • CRUMBLE:
  • 40 grams oats
  • 30 grams maple syrup
  • 20 grams desiccated coconut
  • 10 grams chia seeds

Instructions

Add all PUDDING ingredients into bowl. Mix 5 minutes/60 degrees/Speed 4.

Notes

*Pudding mixture fills 10 x silicon muffin moulds. **You can use metal/porcelain moulds/ramekins, however grease lightly with cooking oil before pouring mixture in. ***If you want a generous amount of crumble to top, you can easily double the mixture.

No Bake Mango Mousse Slice

This is my mum’s recipe that I have grown up with!! My family has this regularly when Mango’s are in season! This is a refreshing and delicious dessert, snack or a ‘bring a plate’ dish in summer! It is a super simple dish and a hit with everyone in the family!!

Prepare and add mangoes into a large baking pan/roasting tray.

Add the 2 x jelly packets, gelatine powder and water in bowl.

Heat 4 minutes/50 degrees/Speed 2.

Add evaporated milk and eggs.

No Bake Mango Mousse Slice

Ingredients

  • 2 mangoes (peeled, seed removed and roughly diced)
  • 1 x packet pineapple jelly
  • 1 x packet orange jelly
  • 10 grams gelatine powder
  • 500 grams water
  • 1 x can evaporated milk (approx. 375 grams)
  • 2 x eggs

Instructions

METHOD (THERMOMIX):

Prepare and add mangoes into a large baking pan/roasting tray.

Add the 2 x jelly packets, gelatine powder and water in bowl. Heat 4 minutes/50 degrees/Speed 2.

Add evaporated milk and eggs. Mix 10 seconds/Speed 4.

Pour over mangoes and set in fridge overnight.

Cut up in slices and serve chilled.

METHOD (NON THERMOMIX):

Prepare and add mangoes into a large baking pan/roasting tray.

Add the 2 x jelly packets, gelatine powder in a large bowl. Mix with 500 grams boiling water until jelly crystals dissolve.

Add evaporated milk and eggs and mix until mixture well combined.

Pour over mangoes and set in fridge overnight.

Cut up in slices and serve chilled.

Notes

*This works with other flavours of jelly - however it looks better with orange/yellow coloured jelly - i.e. lemon, mango, passionfruit, pineapple, orange.

LCHF Bounty Chia Seed Pudding

OMG! This is  soooo delicious! The boys love this at room temperature in their reusable Sinchies pouches (the boys looooove dark chocolate) and I love this chilled (however my husband runs from the words ‘chia seeds’ so more for us!)!! When served at room temperature/warm, this has a pudding-like texture. When served chilled, this has a thick indulgent mousse-like texture – and I personally think it tastes sweeter when served cold (might be psychological!).

I’m not great with sticking to diets (I’m more of an ‘in moderation’ dieter) but this is delicious AND is LCHF (Low Carb Healthy Fat)!

The boys love eating this in their Sinchies pouches! You can keep it in the fridge, then leave it out on the bench for a bit till room temperature and it will be nice and gooey to suck out!

LCHF Bounty Chia Seed Pudding

Cooking Time: 5 minutes

Ingredients

  • 400 grams coconut cream (1 x can)
  • 100 grams Lindt 70% Dark Chocolate
  • 100 grams water
  • 50 grams chia seeds
  • 30 grams desiccated coconut

Instructions

METHOD (THERMOMIX):

Add all ingredients to bowl.

Cook - 5 minutes/70 degrees/Speed 2.

Serve immediately or chill in fridge.

METHOD (STOVETOP):

Add all ingredients to a medium sized saucepan.

Cook on medium heat until mixture thickens.

Serve immediately or chill in fridge.

Notes

*When served at room temperature/warm, this has a pudding-like texture. **When served chilled, it thickens to a thick indulgent mousse-like texture. ***You can use other types of chocolate to customise the flavours (note: if you are LCHF use 70% Lindt)
