Sesame, Chia and Flax Seed Snaps

I buy the storebought sesame seed snaps a lot as the whole family loves it! These taste exactly like the storebought stuff – but with extra goodness with chia and flax seeds which add nicely to the crunch! I have tried this recipe with both brown sugar and coconut sugar – both turn out amazing! I find the brown sugar sweeter, and more like the storebought stuff. The coconut sugar version isn’t as sweet and is slightly less crunchy than the brown sugar version (though they are still pretty crunchy – you would only notice if eating them one after another!)

Add all ingredients into bowl.

Cook 6 minutes/100 degrees/Speed 1.

Whilst hot, pour onto baking paper on the baking tray.

Place another sheet of baking tray over the mixture, and roll and fatten mixture with a rolling pin. Peel off top layer of baking paper.

Bake mixture for 6-8 minutes or until browned.

Take out of the oven and leave to cool for a minute or so, then use a pizza cutter or knife to cut into squares whilst mixture is still soft. Wait to cool completely before eating, they will be super crunchy once cool.

Ingredients

  • 100 grams honey
  • 100 grams brown sugar or coconut sugar
  • 100 grams sesame seeds
  • 50 grams chia seeds
  • 50 grams flax seeds
  • 20 grams coconut oil

Instructions

Preheat oven to 180 degrees. Cut 2 x sheets of baking paper the size of your baking tray.

Add all ingredients into bowl. Cook 6 minutes/100 degrees/Speed 1.

Whilst hot, pour onto baking paper on the baking tray.

Place another sheet of baking tray over the mixture, and roll and fatten mixture with a rolling pin. Peel off top layer of baking paper.

Bake mixture for 6-8 minutes or until browned.

Notes

*Some mixture sticks to the top sheet of baking paper depending on the angle or how quick you pull it off. You can spray some cooking spray on the sheet of baking paper so it peels off easier. **The coconut sugar version isn't as sweet, and is slightly chewier than the brown sugar version (however it still has a crunch).

10 Second Apple Cinnamon Slice

This is super quick, easy and HEALTHY! The apple and cinnamon flavours shine out in this moist and fluffy slice.

10 Second Apple Cinnamon Slice

Ingredients

  • 2 x red apples (quartered and cored)
  • 150 grams wholemeal plain flour
  • 100 grams coconut oil
  • 70 grams coconut sugar
  • 60 grams walnuts (or sunflower seeds if nut free)
  • 1 x egg
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • + 1 teaspoon cinnamon/2 teaspoons coconut sugar to top

Instructions

METHOD (Thermomix):

Preheat oven to 180 degrees.

Add all ingredients to bowl. Mix 10 Seconds/Speed 5.

Pour and spread into baking pan.

Mix 1 teaspoon cinnamon and 2 teaspoons coconut sugar together in a small bowl and sprinkle over slice mixture.

Grate apples, melt coconut oil, and chop walnuts.

Mix all ingredients in a large bowl until well combined.

Mix 1 teaspoon cinnamon and 2 teaspoons coconut sugar together in a small bowl and sprinkle over slice mixture.

Bake for 20 minutes or until skewer comes out clean.

Notes

*You can use normal plain flour instead of wholemeal, another oil i.e. rice bran, vegetable, instead of coconut sugar, or white sugar instead of coconut sugar

10 Second Coconut Date Loaf

Quick, healthy, easy and delicious! This is amazing when it is fresh and hot, spread with a thick layer of butter!! PS. my husband wanted me to name this ‘A Date with a Coconut’! 😉

  • 180 grams wholemeal plain flour
  • 170 grams milk
  • 160 grams pitted dates
  • 70 grams coconut oil
  • 50 grams coconut sugar
  • 30 grams desiccate coconut
  • 2 x eggs
  • 1 teaspoon bicarb soda

Instructions

METHOD (Thermomix):

Preheat oven to 180 degrees.

Add all ingredients to bowl. Mix 10 seconds/Speed 5.

Pour and spread into loaf pan.

Bake for 30 minutes or until skewer comes out clean.

METHOD (Non Thermomix):

Chop dates into 1cm pieces, and melt coconut oil.

Mix all ingredients together in a bowl.

Pour and spread into loaf pan.

Notes

You can use 'normal' plain flour instead of wholemeal, and white sugar instead of coconut sugar.

Coconut Quinoa Muffins

I love coconut, I love quinoa, and I love them in baking! Together, they form a delicious muffin and this will fill your house with the most AMAZING smell!!

You can substitute with different types of milk, flour and sugar depending on your tastes/allergies/intolerances/what you have in your kitchen.

The caramelly coconut flavour with the texture of quinoa is delicious!!

Add 1 litre of water into the bowl, and add quinoa in steaming basket.

 Cook – 20 minutes/Varoma/Speed 2.
Empty water from bowl and set aside cooked quinoa.

Mix – 15 seconds/Speed 4.

  • 200 grams coconut milk
  • 200 grams self raising flour
  • 100 grams coconut sugar
  • 50 grams desiccated coconut
  • 1 teaspoon vanilla bean paste/extract
  • 1 egg

Instructions

Preheat oven to 180 degrees.

Add 1 litre of water into the bowl, and add quinoa in steaming basket. Cook - 20 minutes/Varoma/Speed 2.

Empty water from bowl and set aside cooked quinoa.

Add all ingredients including the set aside quinoa. Mix - 15 seconds/Speed 4.

Spoon into muffin cases.
