These are a quick, easy and healthy snack which is wheat free, dairy free, refined sugar free, egg free and nut free! They are super delish with a chewy crunchy texture – even my chocolate loving boys can’t stop eating these, and they are fantastic for my sweet pregnancy cravings!!

10 Second Grain Free Bites

Serves: 24 pieces Cooking Time: 10 minutes

Ingredients

  • 100 grams oats
  • 100 grams dried apricots
  • 100 grams honey
  • 30 grams desiccated coconut
  • 20 grams flax seeds
  • 20 grams sunflower seeds
  • 20 grams pepitas/pumpkin seeds
  • 20 grams coconut oil
  • 10 grams chia seeds
  • 1 teaspoon vanilla bean paste/extract
  • Pinch of salt

Instructions

METHOD (THERMOMIX):

Preheat oven to 180 degrees.

Add all ingredients to bowl.

Mix 10 seconds/Speed 5.

Spoon mixture into mini muffin tray(s). Press mixture down with damp fingers/hands.

Bake for 10 minutes or golden brown.

Leave to cool before taking out of tray(s).

METHOD (BLENDER):

Preheat oven to 180 degrees.

Add all ingredients to blender.

Mix on the highest setting until all of the ingredients have combined.

Spoon mixture into mini muffin tray(s). Press mixture down with damp fingers/hands.

Bake for 10 minutes or golden brown.

Leave to cool before taking out of tray(s).

Notes

*You can use other dried fruit instead of the dried apricots (i.e. pitted dates, sultanas). **You can use rice malt syrup instead of honey. ***If you don't have mini muffin trays, you can make this into a slice and cut it up into bite sized pieces once cooled.

This is a delicious variation of my No Bake Mango Mousse Slice! Summer is plentiful of beautiful fresh fruits, including cherries, so I thought they would be PERFECT in this no bake slice! YUM!

  • 400 grams fresh cherries (pitted/cut in half with seed removed)
  • 1 x packet strawberry jelly
  • 1 x packet raspberry jelly
  • 10 grams gelatine powder
  • 500 grams water
  • 1 x can evaporated milk (approx. 375 grams)
  • 2 x eggs

Instructions

METHOD (THERMOMIX):

Prepare and add cherries into a large baking pan/roasting tray.

Add the 2 x jelly packets, gelatine powder and water in bowl. Heat 4 minutes/50 degrees/Speed 2.

Add evaporated milk and eggs. Mix 10 seconds/Speed 4.

Pour over cherries and set in fridge overnight.

Cut up in slices and serve chilled.

*The cherries without seed weighs approx. 380 grams. **You can use different types of fruit/berries instead of the cherries. ***This works with other flavours of jelly - however it looks better with red coloured jelly (looks nice with the cherries!)

With all the festive sweet treats lately, I wanted to sneak in some healthy goodness into the boys, especially since they haven’t been eating their fruit well lately (they chew their fruit then spit it out!) ahhh!

  • 1 x Apple (quartered and cored)
  • 1 x Banana (peeled and broken into pieces)
  • 30 grams desiccated Coconut
  • 60 grams Dates
  • 300 grams wholemeal self raising flour
  • 230 grams milk
  • 80 grams coconut sugar
  • 75 grams coconut oil

Instructions

Preheat oven to 180 degrees.

Add all ingredients to bowl. Mix 30 second/Speed 4.

This is my mum’s recipe that I have grown up with!! My family has this regularly when Mango’s are in season! This is a refreshing and delicious dessert, snack or a ‘bring a plate’ dish in summer! It is a super simple dish and a hit with everyone in the family!!

It’s the most WONDERFUL TIME of the year!!! I’ve always loved Christmas and now it is so exciting to share it with the boys! Milo 3 in 1

You will be familiar with this name ‘Milo 3 in 1’ if you are from or know someone from Malaysia or Singapore! I grew up with this and looooooove it! Milo 3 in 1 are pre packaged sachets with Milo, creamer/milk powder and sugar and all you need to do is add hot water (or add hot water/cold water and ice if you want it cold). It tastes much lighter than the usual Milo + milk and is just so easy to prepare! I sometimes find the sachets in Chinese grocery shops here, however they taste really different from the ones in Malaysia. As it contains dairy, the Malaysian Milo 3 in 1 sachets are something that we haven’t been able to bring back home after trips to Malaysia!  This is my version, which isn’t as sweet as the original Milo 3 in 1 sachets that I’ve grown up with (as my ageing tastebuds prefer less sugar!), but is amazingly satisfying and brings back all my childhood memories! This makes it so easy to get my Milo hit (as the boys in my house are always guzzling up the fresh milk in the house! This is also a great gift idea!

  • 200 grams Milo
  • 150 grams milk powder
  • 30 grams sugar

TO SERVE HOT: Add approx. 3 tablespoons* for each mug and fill the mug boiling hot water. Stir well. TO SERVE COLD: Add approx. 3 tablespoons* for each cup, top with a little bit of boiling hot water to stir and combine. Top up with cold water and ice. Stir well. *Amount of Milo 3 in 1 added per cup depends on your tastebuds/size of the cup!

Leftover Cereal Bars

This is a quick and easy way to use up the cereal in your pantry that you’re sick of eating, no-one’s eating, or is getting a little stale. In this batch I used Kelloggs Sultana Bran Buds (which is the boys fave) and a cranberry granola mix which my husband and I were crazy over and now I can’t take another bite of!

  • 300 grams cereal/granola/muesli

METHOD (NON THERMOMIX):

Add rice malt syrup and coconut oil in a small pot on the stove and heat on low to medium heat until combined.

Add cereal/granola/muesli and mix until well combined.

LCHF Bounty Chia Seed Pudding

OMG! This is  soooo delicious! The boys love this at room temperature in their reusable Sinchies pouches (the boys looooove dark chocolate) and I love this chilled (however my husband runs from the words ‘chia seeds’ so more for us!)!! When served at room temperature/warm, this has a pudding-like texture. When served chilled, this has a thick indulgent mousse-like texture – and I personally think it tastes sweeter when served cold (might be psychological!).

I’m not great with sticking to diets (I’m more of an ‘in moderation’ dieter) but this is delicious AND is LCHF (Low Carb Healthy Fat)!

LCHF Bounty Chia Seed Pudding

Cooking Time: 5 minutes

Ingredients

  • 400 grams coconut cream (1 x can)
  • 100 grams Lindt 70% Dark Chocolate
  • 100 grams water
  • 50 grams chia seeds
  • 30 grams desiccated coconut

Instructions

Add all ingredients to bowl.

Cook - 5 minutes/70 degrees/Speed 2.

Serve immediately or chill in fridge.

METHOD (STOVETOP):

Add all ingredients to a medium sized saucepan.

LSA

LSA is an acronym for milled Linseeds (Flaxseeds), Sunflower Seeds and Almonds. LSA is high in protein, fibre and Omega 3 essential fatty acids. LSA is a rich source of protein which helps with sugar cravings and helps balance sugar levels.

LSA is a fantastic way too add extra nutrients into your food! You can add it to your smoothies, cereal/muesli in the morning, yoghurt, baked goods, bliss balls, sprinkle some through your main meals, or even use it as a coating for your chicken nuggets/fish fingers instead of breadcrumbs!

I have used LSA in some of my recipes including my Ferrero Rocher Bliss Balls, Apple Pie Bliss Balls and Simple Banana Smoothie!
