Lamington Cupcakes

Yum! To celebrate Australia Day (and being Aussie every other day), this is a super delish and easy lamington recipe! I love lamingtons, and have made the ‘real’ square ones once, but it is way too fiddly and messy for me – this is soooo much easier, quicker ANNNNDDD you get a bonus AMAZING milkshake after you make them!! My fussy milkshake husband said it was one of the best milkshakes he’s had!

If you LOVE lamingtons too, a must try is my Baked Lamington Drops – soooo gooood!!!

Add ‘cupcake’ ingredients to bowl.

Mix 30 seconds/Speed 6.

Distribute batter between 12 muffin cases.

Bake for 17 minutes or until a skewer comes out crumb free.
Leave to cool. Clean and dry bowl.

Once cool, add ‘topping’ ingredients to bowl.

Mix 2 minutes/50 degrees/Speed 2. Scrape down.
Mix a further 2 minutes/50 degrees/Speed 2.

Pour topping mixture into a small bowl, next to a bowl of shredded/desiccated coconut.

Dip the tops of the cupcakes into the chocolate topping…

…then immediately dip/press into the coconut. Repeat with all cupcakes.

Add the remaining chocolate topping and coconut, plus milk and ice into the bowl.

Lamington Cupcakes

Serves: 12 muffin sized cupcakes

Ingredients

  • CUPCAKES:
  • 210 grams self raising flour
  • 190 grams butter
  • 150 grams sugar
  • 80 grams milk
  • 40 grams cornflour
  • 3 x eggs
  • 2 teaspoons vanilla bean paste/extract
  • TOPPING:
  • 200 grams dark chocolate chips
  • 30 grams coconut oil
  • Approx. 1 cup shredded/desiccated coconut
  • MILKSHAKE:
  • Leftover 'topping' ingredients
  • 250 grams milk
  • Handful of ice

Instructions

Preheat oven to 160 degrees.

Add 'cupcake' ingredients to bowl. Mix 30 seconds/Speed 6.

Distribute batter between 12 muffin cases.

Serving suggestion - these would be AMAZING with the tops cut off and with cream and jam in the middle!!

Milo 3 in 1

You will be familiar with this name ‘Milo 3 in 1’ if you are from or know someone from Malaysia or Singapore! I grew up with this and looooooove it! Milo 3 in 1 are pre packaged sachets with Milo, creamer/milk powder and sugar and all you need to do is add hot water (or add hot water/cold water and ice if you want it cold). It tastes much lighter than the usual Milo + milk and is just so easy to prepare! I sometimes find the sachets in Chinese grocery shops here, however they taste really different from the ones in Malaysia. As it contains dairy, the Malaysian Milo 3 in 1 sachets are something that we haven’t been able to bring back home after trips to Malaysia! ย This is my version, which isn’t as sweet as the original Milo 3 in 1 sachets that I’ve grown up with (as my ageing tastebuds prefer less sugar!), but is amazingly satisfying and brings back all my childhood memories! This makes it so easy to get my Milo hit (as the boys in my house are always guzzling up the fresh milk in the house! This is also a great gift idea!

Milo 3 in 1

Ingredients

  • 200 grams Milo
  • 150 grams milk powder
  • 30 grams sugar

Instructions

METHOD (THERMOMIX):

Add all ingredients to bowl.

Mix 10 seconds/Speed 9. Store in an airtight container.

METHOD (NON THERMOMIX):

Add all ingredients in a blender or in a medium sized bowl.

Blend or mix together until ingredients are well combined. Store in an airtight container.

Notes

TO SERVE HOT: Add approx. 3 tablespoons* for each mug and fill the mug boiling hot water. Stir well. TO SERVE COLD: Add approx. 3 tablespoons* for each cup, top with a little bit of boiling hot water to stir and combine. Top up with cold water and ice. Stir well. *Amount of Milo 3 in 1 added per cup depends on your tastebuds/size of the cup!

‘Ribena’ Syrup

I LOVE RIBENA! This was my only craving while I was pregnant! My husband used to think Ribena was made of Ribenaberries – then found out it was made of blackcurrants. I really wanted to make a homemade version for the boys to try, but unfoooortunately I have never seen blackcurrants sold here in Australia, so I had to improvise a bit!

Add blueberries and grapes in bowl.

Mix 5 seconds/Speed 9. Scrape down.

'Ribena' Syrup

  • 250 grams blueberries (2 x punnets)
  • 200 grams black or red seedless grapes
  • 250 grams sugar
  • 250 grams water

Instructions

Add blueberries and grapes in bowl. Mix 5 seconds/Speed 9. Scrape down.

Add sugar and water. Cook 5 minutes/100 degrees/Speed 2.

Take MC off, and cook a further 12 minutes/Varoma/Speed 2/MC off (use your basket on top of the MC hole in case of splattering).

*This makes approximately 600 grams syrup/cordial. **You can use green grapes too however using black or red grapes enhances the natural colour of the syrup ๐Ÿ™‚

Smoothie bowls are the latest craze on social media and trendy cafes because they look sooo pretty!!! They are great for you as they are jam packed with nutritious ingredients to start your day and are slightly thicker than a normal smoothie so is easy to eat with a spoon!!

The boys love a babyccino when we go out! They are always pretty cheap, however I have paid anywhere for 50 cents to $3 for one little cup of frothed chocolate milk! It is so much easier and cheaper to do at home!!

Mango Beer

Well…. I didn’t make the beer part, but I did make the mango part!

I’ve been thinking of making this for ages in the lead up to Oktoberfest!!! I’m not a beer drinker, but I am known to smash down a mango beer …or 2 …or 3 from the Bavarian Bier Cafe!!! But those type of nights are over now with 2 little boys!!

I topped the syrup with Corona Beer (the only beer I had in the house) and the feedback I got from my husband and friend was that it tasted just like the one from the Bavarian Bier Cafe!

This is my all time favourite cocktail! I love the flavour combination and it is soooooooooooooooooooo easy to drink! It is a hit at any party!! This is particularly amazing in summer, but cocktails are delicious ANY time of the year!! Rain, hail or shine – it’s always cocktail time!!

Frothy Hot Milo

It’s no secret that I LOVE MILO! I love a good hot Milo especially in winter! I lived on this when I was pregnant too!! I usually make my hot Milo by mixing a few teaspoons of Milo with some boiling water, then topping up with milk, then microwaving it to get it piping hot. But of course, the Thermomix makes this much easier (without Milo debris spilling all over the kitchen bench whilst trying to mix it into the mug) and adds a beautiful frothiness! By adding water, I find it makes this hot drink really deliciously light – I find it too heavy with 100% milk, however if you prefer it super creamy, then just replace the water with milk.

Add all ingredients into bowl.
